Pictured here is the total amount of crab meat that I picked today and I must admit that our Creative Director’s plate was piled just a little bit higher than mine. Of course I was prone to sampling what I was picking from time to time. Boy does it takes a lot of time to pick almost two pounds of meat out of the crabs that were caught this morning in those Chester River pots!

After gently separating some of the larger pieces of the picked lump crab meat I then began to add my mix of various ingredients that included cilantro, Worcestershire Sauce, onions, green peppers, selected fruit juices, Creole Mustard and various seasonings. I then gently folded all of these things together in the bowl that you see here.

It was now time to form the crab cakes themselves and here are six of them which averaged a bit over a quarter of a pound each. Actually this evening we finished with nine full sized crab cakes ready to be cooked.

After some time in the fryer our crab cakes were brown while also lightly crusty on the outside and ready for the plate. This evening’s meal consisted of crab cakes, local sweet corn and a southwestern style salad accompanied with fresh mint green tea. While obviously being a bit biased here I do have to say that the whole meal was really tasty. One could still detect the taste of the Maryland Crab Meat after it was cooked just like it did this afternoon after the crabs came out of the steamer and we began to pick them.

My guests this evening enjoyed their meal and also liked watching me run around like a crazy man preparing, taking pictures, blogging, and repeating this process numerous times in the making of their meal. One person even said to me that they were tired just from watching me do it all and you know something now as I wrap up this post so am I.
